Thistle Jay Farm uses organic and regenerative practices to produce flavourful vegetables and pasture-raised chicken just outside of Elora. The charm of the historic bank barn converges with modern regenerative agricultural practices to showcase an interplay of history and growth.
Fresh produce includes: arugula, beets, broccoli, brussels sprouts, napa cabbage, caraflex cabbage, red cabbage, green cabbage, carrots, cauliflower, cherry tomato, cucumbers, eggplant, fennel, garlic, green onions, hakurei turnips, herbs, iceberg lettuce, kale, melons, microgreens, onions (red, yellow, green), pak choi, peas, hot peppers (jalapeno, banana, guajillo), bell peppers, potatoes, radicchio, radish, romaine lettuce, rhubarb, salad mix, spinach, winter squash (butternut, spaghetti, delicata, kuri, hubbard), tomatoes, and zucchini.
